Country of the week

Czechia

Beer halls and baroque spires under a violet sky — Central Europe's most quietly theatrical capital.

  • Food

The Czech table is built for beer. Order svíčková — beef in cream sauce with bread dumplings — at Lokál, where the taps never rest. Grab smažený sýr, deep-fried cheese in a bun, from a window on Wenceslas Square after midnight. Pick up chlebíčky, open-faced sandwiches, at Café Louvre; chase koláče fruit buns at a village bakery. Pilsner Urquell is poured with a foam head thick enough to stand a spoon in.

  • Culture

The pub is the living room. Regulars claim their štamgast corner, order with a nod, and solve the world over half-litres. Weekends, Prague empties toward chalupas — country cottages where the ritual is woodsmoke, mushrooms, and plum brandy. There is a deep theatrical streak: marionette theatres, the National Theatre's gilded boxes, black-light stages. Dogs ride the trams like commuters, and Christmas means carp swimming in the bathtub.

  • Sights

Prague Castle's St. Vitus Cathedral glows amber as the lamps come on along Nerudova Street. Cross Charles Bridge before seven, when the statues have the mist to themselves. Day-trip to Český Krumlov, a Renaissance town folded into a river bend, or to Kutná Hora's bone chapel, its chandeliers strung from 40,000 skeletons. End in Moravia's wine cellar lanes, tasting Grüner Veltliner straight from the barrel.

  • Known for

Beer — the most per person on earth — and the city that beer built. Czechia is famous for Prague's hundred spires, for Pilsner born in Plzeň, for Kafka and Mucha, for Bohemian crystal, for Karlovy Vary's spa colonnades, and for an ice-hockey obsession that fills arenas to the rafters.
